Welcome to a new segment of the blog at WeirdWideWeb.org, where we bring you healthy, MEAT-FREE recipes!
Why? Because your Editor-In-Chief is no longer eating meat, and she happens to know a lot of folks who eat the same way. So, she’s out here stealing all of their recipes and calling it (very creatively):
The Weird Wide Web Kitchen!

First up is Shannon Smith with her tasty Vegan Lasagna recipe…

One pound ground meat substitute (such as Gardein Ground Be’f or Impossible Ground Beef)
1/4 cup diced onions
1 jar tomato sauce
Better Goods or Violife vegan shredded cheese blend
Follow Your Heart feta and parmesan vegan cheeses
A few tablespoons nutritional yeast
4 large white mushrooms, sliced thin
1 lb. bag of sliced squash and zucchini
1 lb. box lasagna ready-to-bake noodles
Fry onions, mushrooms, and ground beef substitute until done, add squash and zucchini, add spices and spaghetti sauce.
Cook until veggies are nearly tender. (At this point, I like to mix in fresh basil and rosemary from the plants in my window as well.)
Sprinkle nutritional yeast in sauce and stir.
Layer in baking pan, beginning with noodles, then add sauce mixture, then all cheeses.
Bake on 350 for 30 mins.
Let sit for 20 min and then DEVOUR! 😋
